With the autumn just around the corner the season brings new seasonal ingredients and an excuse for savouring something sweet.

    JON CAKE

Encasadas are a traditional Catalan sweet popular in Barcelona. Made with shortcrust pastry, which is in turn prepared with flour, butter, sugar and salt, it has a traditional filling of cottage cheese, egg, sugar and lemon. Jon Cake, famous for its cheesecakes, has been inspired by this traditional recipe, which is in turn a cheese pastry, to offer the city its own version of encasada. In this project that Jon García, its pastry chef and founder, is so excited about, he is accompanied by Toni Roig, the fifth generation of pastry chefs at the helm of La Colmena: based on the family recipe book. The original recipe, filled with cottage cheese, is found in La Colmena, along with the innovation of the chocolate filling. And that same recipe is the one Jon Cake uses to offer his own version: encasada filled with cheesecake cream.

    DELACREM

In 2023, the renowned Puerto Rican pastry chef Antonio Bachour, together with Jordi Vilà (and under the direction of the Gremi de Pastisseria de Barcelona) created a pastry to present to the city. A cake that, in its recipe, captured the essence of the territory and the seasonality of the products: an almond sablée tartlet, filled with almond and fig cream and finished with a layer of honey cream and fresh fig segments. A conversation between the master pastry chef Oriol Carrió and the master ice cream maker Massimo Pignata, from the artisanal ice cream parlour DelaCrem, has resulted in La Mercè not only having a cake, but also a La Mercè ice cream.
