Holiday fare in BCN hotels
The Christmas and New Year’s holidays are on the horizon, and with them the need to sort out our plans for the meals that form an essential part of the festivities. The city’s hotel provide one option, especially when the numbers involved put pressure on our kitchens.

The hotel's gastronomic assessor, chef Nandu Jubany (with a Michelin star for his restaurant Can Jubany) has put together several special menus for the seasonal dates at the end of December and January, some with children's options. The Christmas Eve begins with a Whiskey sour and maracuyá bonbon and ends with a hollow chocolate Christmas tree ball filled with citrus and nougat. The mains include Foie Massini and smoked eel, Carpier salmon blinis and caviar, Spicy langostine prawn brioche ... For the next day, the brunch promises to be a veritable feast that includes a vermouth station and gin&tonics bar, ham, oysters, Cream of chestnuts with Quail confit, Escudella (pasta broth), fresh fish with spiced salt, leg of lamb with herb butter and nuts or succulent roast suckling pig with caramelized apples. Then on the 26th the inevitable Cannelloni (truffled), Monkfish zarzuela, squid and clams and a flambéed Rum Baba with ice cream and nougat for dessert. On New Year's Eve a buffet of Iranian caviar, Kobe tartare, the Majestic Mariscada (seafood platter), the Gaudí Sole served with R champagne sauce (Ruinart), Papillote of roast farmhouse Poularde with crayfish and dried fruits, the Termidor lobster and the Venison loin with pepper and chestnut sauce together with live music, DJ and open bar from midnight. And to kick off 2018 brunch with sushi corner and new dishes: Lobster and langostine dumpling, Steamed bread with squid and piquillo mayonnaise, Cuttlefish rice and octopus, Terrine of red scorpionfish with mayonnaise wasabi and soy caviar. The hotel's restaurant, Roca Moo (one Michelin star) with Rafa Panatieri as executive chef and the assessment of the renowned Roca brothers from El Celler de Can Roca, is offering special menus for Christmas, St. Stephen’s and New Year's Eve, as well as a pack which includes a 2-night stay, breakfast buffet, New Year's Eve dinner with wine pairing, party favours, dancing, live music and DJs until dawn, to bid farewell to 2017 and welcome 2018 without having to think about anything other than enjoying what’s on offer. Some of the gastronomic creations on the menu include the Flower of Barcelona, the Capon Terrine with tuber selection and beetroot, Veal broth Ravioli of, Palamós red shrimp and caviar, Caldereta of lobster, Wild sea bass with velouté of seaweed or the Rib of suckling lamb with sweetbread and quince. For the nights of December 24th and 25th you can also opt for the Roca Bar more informal proposal, with suggestions such as the Squid sandwich, the Foie gras and apple timbale, Turkey cannelloni, Grouper with citrus fruit or Suckling pig with apple. Le Meridien Barcelona Hotel and CentOnze will be preparing their holiday fare this year with new head chef Luis Ramos, who recently joined the team. Christmas Eve dinner, Christmas day brunch, St. Stephen’s day lunch, New Year’s Eve gala dinner and party as well as New Year’s Day buffet. Highlights of the Christmas menu include the Bluefin Tuna in Tataki with Avocado and Apple tartar and Seaweed Salad or the Prawn skewer wrapped in Kataifi Pasta with Lime Mayonnaise. Without forgetting traditional favourites such as the Traditional “Escudella”, Beef stew, with Pasta Shells stuffed with “Pilota”, small Meatballs. The culinary accent here is on modern interpretations of traditional festive dishes with a world fusion element, thanks to the new chef. Raül Balam and Alberto Castiñeiras, who respectively direct the gastronomic offering at the Moments and Blanc restaurants, have designed celebratory menus for these much anticipated “fun, family, friendly and festive" meals that will soon be upon us. Doubled up (Moments and Blanc) options for Christmas Eve, Christmas and New Year's Eve, in addition to the New Year's brunch, and a way to recover the morning after the night before paired with Roscón de Reyes en Blanc, which can be complemented by making a present of Mandarin Oriental experiences like the bespoke Mediterranean Memories perfume created by Ramon Monegal exclusively for the hotel. On the table, dishes as suggestive as the ‘Christmas Eve’ box, the 2.0 Prawn cocktail, the Golden Foie, the Lobster romesquet (type of stew with romesco base), the traditional Christmas Escudella, the Pintada a-la-Catalana, Las bolas del árbol, Russian caviar, Desde la mirada de un niño, Barnacle Salad and Almond beso. The chef Claudio Aguirre creates a journey through regional gastronomy, with traditional dishes reinterpreted from a contemporary perspective and a nod to the French culinary universe, in five Christmas menus made with fresh and local products (some grown in the hotel garden). Some of the highlights include; Turbot soaked with violet potato parmentière, tarragon and farm-to-table vegetable cocotte al-dente on the Christmas Eve menu. Red Mullet bouillabaisse in its rouille on New Year’s. Seafood, sushi, Escudella (broth) and Grilled Meats with Galets and stuffed turkey for Christmas brunch. For St. Stepehen’s day (December 26), Off-the-bone shoulder of Lamb confit (cooked sous vide at 80 ºC for 14 hours) with lemon thyme ratatouille. To bid farewell to 2017 a thematic banquet inspired by the stars (the celestial variety) in a tasting menu conceived as a cosmic journey, with highlights such as oysters, blinis with caviar, Kaolin potato and espardenya de mar (Sea cucumber) a typical Costa Brava seafood, or the Venison served with red berries. For King’s Day (Jan 6) a traditional classic reinterpreted: Avocado, king prawn and king crab cannelloni. And to sweeten the arrival of 2018 classic desserts such as the Roscón de Reyes on January 6th or a creative version of the Christmas Log together with all the favourites (vanilla, marrón glacé and red currant mousse as well as gingerbread cookie).
