Les Truites (truite means omelette in Catalan) is a both a pioneer and a culinary reference within the world of tortillas in Barcelona. The restaurant-bar has recently moved to a new location from C. Reus to C. Arimón no. 22, within the same Barcelona neighbourhood El Putxet. Les Truites was originally founded 36 years ago by the self-taught chef Joan Antoni Miró, who is currently preparing the second instalment of his popular book "L'art de fer truites" which includes surprising new recipes such as the Croissant and Ham omelette, the Spring Onions with Sauce Filling and the Plum and Chocolate sweet varieties, amongst many more creations. “The omelette is a universal dish, cheap and simple to prepare which never occurred to anyone to develop in a meaningful way. It’s also a food that can be enjoyed at any time of the day”, according to founder and chef Joan Antoni Miró.

The omelette is one of the most adaptable of culinary dishes, sweet or savoury, luxury or budget, light or heavy, the options are only limited by one’s imagination. From the most traditional to the most avant-garde omelettes: contrasting flavours, bright colors, imaginative forms, geometric compositions, with multiple layers, themed flavours... tortillas that seem nothing like tortillas. The menu is organised under sweet, savoury and stewed options. There are as many varieties as there are ingredients: vegetable, meat and sausage options, seafood, cheese, sweet, mushrooms, potatoes, with juice, combined flavour omelettes and tortillas tarts.

    One of the most interesting choices on the updated menu is the Croissant with Ham option. Also worth investigating is the Chicken Curry, the Pigs’ Trotters, the Cod with Seaweed, Spring Onions with Sauce Filling, the Fish and Seafood in Brine, Mushrooms with Truffle Sauce, the Spinach stuffed with Ham and Cheese and the Ricotta Cheese and Mint. And under the dessert section options include; the Cherry Omelette, Ordal Peaches, Chocolate, Edible Flowers, Nougat, Pastry and even San Juan Coca Bread. To give customers an idea of ​​the variety and diversity of omlettes on offer they can order an assortment of different varieties (180 in total) which is updated daily depending on the season.

    The new restaurant is much larger than the previous Les Truites with approximately 65 square meters and space for 35 diners. The restaurant offers breakfast, lunch and dinner. Open from 8:00 to 20:00 pm Monday to Saturday and 20:00 to 23:00 h have Thursday, Friday and Saturday. Tortillas service also offers lunches and monthly workshops organized tortillas.
