Owner Jon García is a restless inventor who likes nothing better than to innovate, using the humble cheesecake as his culinary muse. Jon Cake is a passion project that has acquired a loyal following since its inception, just five years ago. This time around he is collaborating with Nacho Ramiro (winner of the Best Artisan Butter Croissant in Spain in 2021, with Panem) to create a selection of classic brioche boulangerie, which will also be subject to experimentation, with a focus on the brand's intimate connection with everything connected with cheese (and its artisans). The cheesecake-filled croissant is one of the must-try items on the menu.
