All about the pizza

The renowned pizza restaurant group has recently landed in Barcelona after their triumphant arrival in Madrid and Valencia. Grosso Napoletano elevates the humble pizza to a gastronomic and theatrical experience. Gastronomic because for the true fans of pizza the Napoletano pizza is really the only authentic pizza. At Grosso Napoletano this is underlined with the very architecture of the restaurant itself, the log fired pizza oven is centre stage.

There are many culinary surprises at Grosso Napolitano to discover, for the palate and for the eyes. The approach to making authentic pizzas includes four key elements: the base which is doubly fermented at Grosso Napoletano using Italian flour and sourdough which is allowed to rest for 48 hours, it has a very distinctive crust. Elastic in the middle the base is smooth and not overly chewy. Of course the authentic Italian ingredients are crucial as well, with mozzarella and tomatoes imported directly from Italy on a regular basis. Then there’s the pizza makers or the Pizzaioli who are all from Naples and specially trained. Last but not least is the log fired oven at the centre of the restaurant, made from stone, with a technique passed down form one generation to the next within the same Napolitano family.  The pizzas are cooked at 500° C for between 60 and 90 seconds.
