Barcelona’s 18th Salón del Manga
Taking place between the 1st and 4th of November the 18th edition of Barcelona’s Salón del Manga brings together renowned figures from Japanese gastronomy. One of whom will be Hiroyoshi Ishida, chef of the Tokyo’s Mibu restaurant which together with Ferran Adrià and Albert Raurich (former head of the kitchen at elBulli and now at the Barcelona based Dos Palillos), offering a cooking master-class introduced by a lecture from Adrià considering the influence of Japanese cooking on western gourmet culture.
Ishida and his team worked in elBulli during 2003 which is referenced in detail with the Mibu-elBulli manga by Dai Ochiai and Naomi Tanaka who will also be present at the Salón. Original pages from the publication have been included for the exhibition Manga a la carta looking at the food illustrated in the Japanese comics divided into two different sections: one looking at the different dishes and food represented or which has inspired character’s names, the other featuring mangas where cooking is the central theme.
An area dedicated to Japanese restaurants will also be included at the Salón, with a programme of workshops directed by Roger Ortuño Flamerich, author of the ComerJapones.com blog, featuring some of the best known Japanese chefs working in Barcelona: Hideki Matsuhisa (Koy Shunka), Master Tan (Icho), Takashi Ochiai of the eponymous pastry shop, Kenji Ueno (Can Kenji), Nobutada Kawagoe (Bouzu), Naoyuki Haginoya (Grupo Nomo), Atsushi Takata (La Cuina de l’Uribou), Kazutoshi Komuta (Shibui), Mutsuo Kowaki and Hiroki Yoshiyuki (Ramen-ya Hiro) and Keisuke Ohtani (Matsu). They will be letting us in on their special techniques of cutting fish, specific reinterpretations of their country’s traditional cooking and how to prepare udon and ramen noodles, okonomiyakis and gyozas, dorayakis and mochis, appetizers “between two lands” as well as decorative sushi. In addition to all this lessons from Shoko Nakanishi (from the Japanese consulate here in Barcelona) on how to make onigiri, Natàlia Mazarredo (also part of the delegation) looks at table etiquette, and Yoka Kamada, a representative of the Fundación Japón, will lead a bento box workshop inspired by manga characters.
