This year, the brand is accompanying this classic with a surprising gelato version that promises to become ‘the irresistible treat’ of this spring season.

The Colomba is one of the great symbols of Italian Easter baking. With its distinctive dove-shaped form—a symbol of peace and renewal—this sweet cake is made from simple, high-quality ingredients: selected flour, fresh free-range eggs, butter, sugar and yeast. The result is a soft, spongy and delicately sweet dough, the result of a slow fermentation process that gives it its characteristic lightness.

True to its Florentine heritage and innovative spirit, Badiani is presenting two artisanal varieties this year: the Colomba Classica, considered the spring precursor to panettone. The more traditional version, with candied orange inside and topped with a crunchy coating of almonds and sugar (750 g, €32), and the Colomba Dark Chocolate, an intense and contemporary take, enriched with dark chocolate chips for cocoa lovers (750 g, €35).
