Cheesecake like it should be
Jon Cake is a gourmet initiative by pastry chef Jon García creating high-quality Basque-style cheese cakes, completely different from the vast variety of cheeses used in other commercial cheesecakes. Four in total, at the moment: Emmentaler AOP, Le Gruyère AOP Reserva, Appenzeller® Extra and Tête de Moine AOP – all thanks to a collaboration with Cheeses from Switzerland. Based on traditional recipes, these cheesecakes contain egg, milk and gluten, although on request (and a small extra cost) García can make gluten-free biscuit bases that can sometimes contain traces.
The different varieties of Swiss cheeses are available at his workshop-bakery located in the Born neighbourhood of Barcelona, c/ Assaonadors 29 and also in its online store, under reservation. The opening hours are from Tuesday to Sunday, from 12:30 a.m. to 8:00 p.m. uninterrupted.
