Cheese and wine is a classic pairing and during the winter months it’s the ideal comfort food and drink. However you enjoy it, for breakfast, between meals, after or before dinner, cheese is a valuable source of calcium and forms an important part of a balanced diet. Among the most renowned cheeses from around the world Swiss cheese is particularly respected by cheese connoisseurs. The taste of their famous cheese varieties is achieved through respecting traditions of this unique landscape and treating the source material, milk like liquid gold. 

Almost twice as much milk is used to make Swiss cheese than other industrially produced alternatives. The cheese makers take delivery of fresh milk twice a day to guarantee the production of the optimum, healthy product. The use of raw, un-pasteurized milk enables a more intense flavour and enhances the aromas derived from grass and Ppasture.

    Vila Viniteca was recently the setting for a master-class presented by Enric Canut, one of the most recognised cheese experts in Spain, with years of experience in the world of gastronomy, including Swiss cheese.

    The rigorous regulations, subject to strict control by the Swiss Federal Office of Agriculture, guarantees the traditional production of the product from the origin of the chain to the end, at which point an appraiser certifies that the cheese is of sufficient quality to bear the stamp of their cheese region.

    The varieties of Le Gruyère AOP (Classic and Reserve) matured for at least 10 months have been produced for 900 years along the same methods.

The Wine Merchants is a one of the most important Spanish suppliers to the restaurant trade and the general pubic.
