Bornès is an immersive experience, the setting, the history, the cocktails and the cuisine transport diners to a space where past and present come together. Traditional dishes meet cutting edge contemporary cooking techniques; the centuries old stone interior is equipped with comfortable seating and ambient lighting to underline the drama of the space. The architecture of the surroundings provides clues as to the previous lives, a pub, a neighbourhood restaurant, a dairy farm, and now a temple of gastronomy. The cocktail bar element is an integral part of the project, an extension of the culinary concept with a creative flare that complements the cuisine.
Serving tapas and shared dishes inspired by Catalan culinary tradition with a modern twist, Bornès pays homage to the essence of the iconic neighbourhood that lends the restaurant its name. The menu is designed to cover a wide range of options: from aperitivos to more generous shared platillos as well as individual main courses. These exquisitely dishes are drawn from the Catalan territories, including the classics and regional specialities. From the Cerdanya trinxat to fricandó, from festive macaroni (a la cardenal) normally reserved for the bourgeoise to the humble clotxa of the Terres de l’Ebre (hollowed out bread loaf with sardine, tomato and onion filling): from north to south, Bornès has selected flavourful traditional dishes, ranging from the most recognisable to the most obscure.

The cocktails are signature creations that engage with the traditions and symbolism of Catalan culture: Crema Catalana in liquid format; Sant Jordi blossoms in the form of a fragrant aperitif; and even Gaudí is interpreted with a drink that fuses form and content. In short, a creative, conceptual, and unabashedly Mediterranean cocktail experience.

At Bornès, the liquid menu is just as important as the food menu: the wine list combines local pride with global curiosity, so that references from Priorat, Penedès, Empordà or Terra Alta coexist with international references, all of them selected to offer a list with history and character.
