Agreste Mar at Serras Barcelona

Agreste is a joint culinary project conceived by Fabio Gambirasi the chef, and Roser Asensio the maître d’ which originally commenced back in 2016. Now almost ten years later, Agreste is transformed into Agreste Mar, marking a new chapter for the restaurant now relocated within the emblematic Hotel Serras Barcelona. This meeting of minds illustrates the importance of both good food and good service. The cuisine is best described as Italian-Catalan cuisine, served in the beautiful surroundings of the hotel’s ground floor, just steps from Barcelona’s Port Vell.
Fabio Gambirasi, originally from Seregno, Brianza (Italy) expresses his personal and professional journey through life with his cuisine, one that unites Italy and Spain through respect for the raw materials, tradition, and a sensibility shared by the entire Mediterranean region. He previously worked at the Trussardi Alla Scala restaurant which boasts two Michelin stars while Barcelona native Roser Asensio comes from a background in Naturopathy, wellness and yoga. A killer combination that elevates the dining experience into something unforgettable, between the cuisine, the service and the setting.

Cappelletti ravioli with 18-month-aged Parmigiano, butter, and sage
Among the highlights of the current menu are dishes that represent this meeting of Italian and Catalan cultures: Sea urchin with salsa de café, Cantabrian superior anchovy, sweet gorgonzola, lemon, or Petit pois (cultivated on the Maresme) with wild black truffle from Berguedà and crispy bread. Fresh pasta is made from scratch twice daily by Fabio and his team and represents the foundation of the Agreste Mar culinary offering: the Cappelletti ravioli with 18-month-aged Parmigiano, butter, and sage (with grated 24-month-aged Parmigiano) or the Egg tagliarini with crayfish and a squeeze of lime perfectly illustrate the chef’s distinctive style. And the seafood options that bear witness to the restaurant location: Baked wild snapper head with Marzuelo s mushrooms.

The original Agreste project dates to 2016, located in the El Coll neighbourhood of Barcelona. After several iterations and a Pop-up sojourn at the Serras, Agreste Mar is now established on a more permanent basis. In the meantime, the original restaurant is being refurbished for a future, as of yet unknown come-back.

The average price of the a-la-carte Agreste Mar menu is 80 Eur. with a tasting menu consisting of nine courses for 100 Eur. with a wine pairing option.
